Cottage Cheese Stuffed Celery

INGREDIENTS

200 pieces (6 lb.) Celery, fresh, 2 to 3-inch pieces
Water, iced, To cover
1 qt. (2 lb.) cottage cheese
4 tbsp. (1 1/2 oz.) tomato catsup
2 tbsp. prepared horseradish
2 tsp. onions, dry, grated

INSTRUCTIONS

Place celery in water 1 hour or until crisp. Drain on sheet pans lined with waxed paper. Set aside.

Combine cottage cheese, tomato catsup, horseradish, and onions; blend thoroughly. Fill hollow section of each celery piece. Cover with waxed paper and refrigerate until ready to serve.

NOTE: 1. 8 lb 4 oz fresh celery A.P. will yield 6 lb trimmed celery cut into 2 to 3-inch pieces.
