Apricot-Pineapple Filling

INGREDIENTS

1 orange (6 oz) orange, fresh, A.P., washed
1 1/2 qt. (3/4-No. 10 cn) apricots, canned, drained
1 1/2 qt (1/2-No. 10 cn) pineapple, canned, crushed
6 3/4 cups (3 lb) sugar, granulated

INSTRUCTIONS

Cut unpeeled orange into quarters; remove seeds. Grind apricots and orange quarters together. Combine ground mixture with pineapple and sugar. Bring to a boil; reduce heat; simmer 25 to 30 minutes; stir often. Cool.

NOTE:
1. This filling may be used in a variety of sweet dough products.
2. Juice drained from apricots may be used in gelatin salads and fruit drinks.
3. 3-No. 2 1/2 cn canned apricots, drained may be used in place of the 3/4-No. 10 cn.
