Apricot-Pineapple Filling (Dried Apricots)

INGREDIENTS

1 orange (6 oz) orange, fresh, A.P., washed
4 1/2 cups (1 lb 8 oz) apricots, dried
1 1/2 qt (1/2-No. 10 cn) pineapple, canned, crushed
9 2/3 cups (4 lb) sugar, granulated

INSTRUCTIONS

Cut unpeeled orange into quarters; remove seeds. Soak dried apricots in 4 1/2 cups cold water overnight. DO NOT DRAIN. Grind apricots and orange quarters together. Combine ground mixture with pineapple and sugar. Bring to a boil; reduce heat; simmer 25 to 30 minutes; stir often. Cool.

NOTE:
1. This filling may be used in a variety of sweet dough products.
