Frying Batter

INGREDIENTS

1 1/4 gal (5 lb) flour, wheat, general purpose, sifted
1/2 cup (4 oz) sugar, granulated
9 tbsp. (6 oz) salt
1 1/4 cups (5 1/2 oz) milk, nonfat, dry
2 2/3 tbsp. (1 1/8 oz) baking powder
2 2/1 cups (11 eggs) eggs, whole
2 2/3 tbsp. (1 1/4 oz) salad oil or shortening, melted
2 qt. (varible) water

INSTRUCTIONS

Sift together flour, sugar, salt, milk, and baking powder into mixer bowl. Combine eggs and salad oil or melted shortening; add to dry ingredients. Slowly add water; beat at medium speed until smooth.

NOTE:
1. This batter can be used for a variety of fruits and vegetables such as apples (7 lb A.P.), eggplant (3 lb 11 oz A.P.), and tomatoes (6 lb 10 oz A.P.). Moist foods should be dredged in flour before dipping into batter. When ready to fry, dip into batter, drain slightly; fry in deep fat 350 to 375 degrees F. until lightly browned.
2. Use batter the prepared. DO NOT SAVE.
