INGREDIENTS
1 1/2 gal (6 lb) Flour, wheat, general purpose, sifted
3 3/4 (2 1/2 oz) salt
1/2 cup (3 1/2 oz) baking powder
1 1/2 cups (8 oz) milk, nonfat, dry
1 1/2 cups (8 eggs) eggs, whole, beaten
3/4 cup salad oil
2 1/4 qt water
INSTRUCTIONS
Mix and sift together flour, salt, baking powder, and milk in mixer bowl. Add eggs, oil, and water to flour mixture; mix well. Drop a scant 1/8 cup on top of simmering stew or into shallow simmering stock. Cover; cook 15 minutes. Do not remove cover during cooking time.
NOTE: 2 1/2 qt other types milk may be substituted for nonfat dry milk and water. Cooked dumplings will be light in color.
