Temperature: 375 degrees F. griddle
INGREDIENTS
1 3/4 cups (8 oz) milk, nonfat, dry
1 1/2 tbsp. (1 oz) salt
3 1/2 cups (1 lb 8 oz) sugar, granulated
6 1/4 qt. (125 eggs) eggs, whole, slightly beaten
2 1/4 qt. water
200 slices (12 lb) bread, dry, sliced
1 qt. (2 lb) shortening, melted
INSTRUCTIONS
Combine nonfat dry milk, salt and sugar; blend well. Add dry ingredients to eggs; whip. Add water and mix well. Dip bread in egg mixture to coat both sides. Place on well greased griddle; fry on one side until golden brown. Turn; fry on other side until golden brown. Serve immediately.
