INGREDIENTS
3 cups (15 eggs) eggs, whole
2 3/4 cups (1 lb 4 oz) sugar, granulated
3 tbsp. (2 oz) salt
2 2/3 tbsp. vanilla
2 7/8 cups (13 oz) milk, nonfat, dry
3 3/4 qt. water, warm
7 1/2 qt (7 lb 8 oz) flour, wheat, general purpose, sifted
7/8 cup (6 oz) baking powder
200 half slices bread slices, cut in half, diagonally
INSTRUCTIONS
Place eggs, sugar, salt, vanilla, milk, and water in mixer bowl; blend at low speed. Beat at medium speed until well blended. Slowly add flour and baking powder; mix at medium speed until smooth.
Dip half slices of bread in batter. Drain. Fry until golden brown. Drain on absorbent paper. Serve immediately.
NOTE: Serve with maple syrup, marmalade, jam or jelly.
