Temperature: 400 degrees F. Oven
INGREDIENTS
1 1/2 qt. (4 lb 8 oz) molasses
3 cups (1 lb 8 oz) shortening, melted
1 1/4 qt (24 eggs) eggs, whole, beaten
5 1/4 qt. water
1 3/4 qt. (1 lb 12 oz) wheat base
6 1/2 qt. (6 lb 8 oz) flour, wheat, general purpose, sifted
2 7/8 cups (13 oz) milk, nonfat, dry
1 1/4 cups (8 1/2 oz) baking powder
4 tbsp. (2 3/4 oz) salt
INSTRUCTIONS
Blend together molasses and shortening. Add eggs. Beat for 5 minutes. Stir in water and wheat base. Let stand 5 minutes.
Mix and sift together flour, nonfat dry milk, baking powder, and salt. Add to wheat base mixture stirring only until dry and liquid ingredients are combined. DO NOT OVERMIX.
Fill each well greased muffin cup 2/3 full. Bake 20 to 25 minutes.
