Red Beans With Rice

Portions: 1/2 cup rice and 1/2 cup beans

INGREDIENTS

3 1/2 qt. (6 lb) rice, medium grain
7 1/4 qt. water, cold
4 tbsp. (3 oz) salt
6 tbsp. (3 oz) salad oil
2 1/4 qt. (3 lb) bacon, raw, chopped
1 1/2 qt. (2 lb) onions, dry, chopped
3 gal (27 lb 8 oz or 4-No 10 cn) beans, kidney, canned
2 tsp. pepper, black
2 tsp. hot sauce

INSTRUCTIONS

Combine all ingredients; bring to a boil. Stir occasionally. Cover tightly and simmer 25 minutes. DO NOT STIR.

Saute bacon and onions until lightly browned. Combine sauteed bacon and onions with undrained kidney beans and seasonings. Simmer 20 minutes. Serve over rice.
