INGREDIENTS
4 1/2 cups (1 lb 8 oz) bacon, raw, chopped
1 1/2 qt. (2 lb) onions, chopped
6 lb rice
7-No 300 cn (6 lb 8 oz) black-eye peas, canned, undrained
7 1/4 qt. water
2 tsp. pepper, black
2 tsp. hot sauce
INSTRUCTIONS
Saute bacon until lightly browned. Add chopped onions and brown slightly. Add rice and stir until well coated. Add undrained black-eye peas, water and black pepper and hot sauce. Mix well. Bring to a boil, cover tightly and lower heat. Simmer 20 minutes or until rice is tender.
