Fruit Bars

Servings: YIELD: 100 Portions (4 Pans)

Pan Size: 18 by 26-inch Sheet Pan
Temperature: 375 degrees F. Oven

INGREDIENTS

3 cups (15 eggs) eggs, whole
3 1/3 cups (1 lb 8 oz) shortening
2 cups (1 lb 8 oz) molasses
4 1/2 qt. (4 lb) flour, wheat, pastry, sifted
4 1/2 cups (2 lb) sugar, granulated
1 1/2 tbsp. (1 oz) salt
2 1/4 tbsp. (1 oz) baking soda
4 tbsp. (1 oz) cinnamon, ground
2 tbsp. ginger, ground
2 qt. (2 lb 10 oz) raisins, washed, drained

INSTRUCTIONS

Put ingredients into mixer bowl in order listed. using beater at low speed, mix 1 to 2 minutes or until thoroughly blended. Scrape down bowl once during mixing.

Divide dough into 12 pieces, about 1 lb each; form into strips about 24 inches long on lightly greased pans, 3 strips per pan. Press strips down until they are about 2 inches wide. Bake 15 minutes. Loosen baked strips from pans while still warm and cut into 16 bars.

NOTES:
1. Use floured boasrd for forming strips.
2. Strips may be iced with Water Icing.
