Temperature: 375 degrees F. Oven
INGREDIENTS
2 3/4 qt. (4 lb) sugar, brown
3 cups (1 lb 6 oz) shortening
1 1/2 cups (8 eggs) eggs, whole
3 qt. (3 lb) cake crumbs
3 1/4 qt. (3 lb) flour, wheat, pastry, sifted
2 1/4 tbsp. (1 oz) baking powder
2 1/2 tbsp. (1 oz) baking soda
1 1/2 tbsp. (1 oz) salt
2 tbsp. maple flavoring
1 1/2 qt. (1 lb 8 oz) nuts, chopped (optional)
1 1/4 cups water
INSTRUCTIONS
Put ingredients into mixer bowl in order listed. Using beater at low speed, mix 1 to 2 minutes or until thoroughly blended. Scrape down bowl once during mixing.
Divide dough into 10 pieces, about 1 lb 6 oz each. Form into rolls 2 inches thick. Wrap in wax paper and chill at least 4 hours. Slice each roll into 40 cookies. Place in rows, 5 by 7, on ungreased sheet pans. Bake about 10 minutes or until very lightly browned. Loosen cookies from pans while still warm.
