Sponge Nut Bars

Pan Size: 18 by 26-inch Sheet Pan
Temperature: 325 degrees F. Oven

INGREDIENTS

1 1/4 qt. (24 eggs) eggs, whole
2 3/4 qt. (5 lb) sugar, granulated
2 3/4 qt. (2 lb 8 oz) flour, wheat, pastry, sifted
2 3/4 tbsp. (1 1/4 oz) baking powder
2 1/4 tbsp. salt
1 1/4 cup water, hot

TOPPING:
3 cups (1 lb 8 oz) butter or margarine
1 3/4 qt. (2 lb) sugar, powdered
2 cups (8 oz) nuts, chopped

INSTRUCTIONS

Beat eggs until thick and lemon colored. Gradually add sugar to eggs, beating constantly. Sift together flour, baking powder, and salt; add to egg mixture. Blend thoroughly. Add water to mixture and mix until smooth. Pour 6 lb of mixture into each greased pan. Bake 40 minutes. Cover with topping while still warm.

TOPPING:
Cream butter or margarine and sugar. Spread on warm cookies. Sprinkle nuts over topping. When ready to serve cut each pan 6 by 9.
