Temperature: 400 degrees F. Oven
INGREDIENTS
2 cups (10 eggs) eggs, whole
3 1/3 cups (1 lb 8 oz) shortening
1 1/4 cups water
3 tbsp. vanilla
2 1/2 qt. (4 lb 6 oz) sugar, granulated
4 3/4 qt. (4 lb 12 oz) flour, wheat, general purpose, sifted
1 1/2 tbsp. (1 oz) salt
6 3/4 tbsp. (3 oz) baking powder
1/4 cup (1 1/4 oz) milk, nonfat, dry
3/4 cup (6 oz) sugar, granulated
INSTRUCTIONS
Put ingredients in mixer bowl in order listed, except for the 3/4 cup of sugar. Using beater at low speed, mix 1 to 2 minutes or until ingredients are thoroughly blended. Scrape down bowl once during mixing.
Divide dough into 10 pieces; about 1 lb 4 oz each. Form into rolls; slice each roll into 20 pieces. Dip each piece in sugar; place sugar side up in rows, 4 by 6, on greased pans. Flatten cookies to approximately 1/4 inch thickness. Bake 10 minutes or until lightly browned. Loosen cookies from pans while still warm.
NOTE: Cookies may be placed on greased pans, flattened and sprinkled with sugar.
