INGREDIENTS
2 1/4 gal. (20 lb 4 oz or 3-No. 10 cn) applesauce, canned
3 3/4 cups (1 lb 4 oz) bread crumbs, dry, toasted
28 egg yolks, beaten
3 cups (1 lb 4 oz) shortening, melted
2 tbsp. cinnamon, ground
2 1/2 cups (1 lb 1 1/2 oz) sugar, granulated
28 egg whites
1 qt. (1 lb 12 oz) sugar, granulated
2 tbsp. vanilla
INSTRUCTIONS
Combine applesauce, bread crumbs, egg yolks, shortening, cinnamon and 2 1/2 cups sugar; mix well. Spread 1 gal in each pan. Bake 45 minutes. Remove from oven. Beat egg whites; add 1 qt sugar gradually. beating to a thick meringue. Add vanilla. Spread about 2 1/2 qt meringue over applesauce in each pan. Return to oven for 15 minutes or until meringue is lightly browned.
