Chicken Fried Beef Patties

Pan Size: 18 by 26-inch Sheet Pan
Temperature: 375 degrees F. Griddle; 325 degrees F. Oven

INGREDIENTS

200 patties (37 lb 8 oz) beef, patties, thawed
3 qt. (3 lb) flour, wheat, general purpose, sifted
6 tbsp. (4 oz) salt
1 tbsp. pepper, black
1 1/3 cups (6 1/2 oz) milk, nonfat, dry
7 1/2 cups water
1 qt. (20 eggs) eggs, whole, slightly beaten
4 1/2 qt. (4 lb 8 oz) breads crumbs, dry
6 tbsp. (4 oz) salt
1 tbsp. pepper, black
5 1/2 cups (2 lb 12 oz) shortening, melted or salad oil

INSTRUCTIONS

Dredge patties in mixture of flour, 6 tbsp salt, and 1 tbsp pepper; shake off excess. Reconstitute milk water; add eggs; blend thoroughly. Dip patties in egg mixture. Dredge patties in mixture of crumbs, 6 tbsp salt, and 1 tbsp pepper; shake off excess. Brown patties evenly on both sides on well greased griddle. Place browned patties 5 by 8 on sheet pans. Bake 10 minutes.

NOTE: 1. If using beef patties with soy concentrate, reduce cooking time one minute per side.
2. Other sizes and types of pans may be used.
