Braised Country-Style Spareribs

Portions: 2 Pieces Each
Pan Size: 18 by 24-inch Roasting Pan
Temperature: 400 degrees F. Oven; 325 degrees F. Oven

INGREDIENTS

50 lb. country-style ribs
3 3/4 qt. (5 lb) onions, dry, finely chopped
9 tbsp. (6 oz) salt
1/4 cup (1 oz) pepper, black
variable (as required) water

INSTRUCTIONS

Cut ribs into serving portions, cut between each bone into pieces. Overlap ribs in rows, fat side up, in pans. Bake at 400 degrees F. for 30 minutes or until golden brown. Drain fat from pans. Sprinkle onions, salt, and pepper over ribs. Add water to cover bottom of each pan. Cover pans. Bake at 325 degrees F. 1 1/2 to 2 hours.
