INGREDIENTS
1 qt. (2 lb) salad Dressing
1 1/2 tbsp. (1 oz) salt
1 gal. (3 lb 8 oz) apples, fresh, eating, unpared, cored 1/2-inch dice
5 1/4 gal. (12 lb) cabbage, fresh, shredded
3 qt. (4 lb) celery, fresh, chopped, 1/4-inch dice
INSTRUCTIONS
Mix together Salad Dressing and salt. Add apples, stir to coat well. Combine apple mixture, cabbage, and celery. Cover; refrigerate for 2 to 3 hours.
NOTE: 1. 4 lb fresh eating apples A.P. (10 apples) will yield 3 lb 8 oz unpared, diced apples.
2. Apples may be dipped in solution of antioxidant and water to prevent discoloration.
3. 15 lb fresh cabbage A.P. will yield 12 lb shredded cabbage.
4. 5 lb 5 oz fresh celery A.P. will yield 4 lb chopped celery.
