Cottage Cheese And Pineapple Salad

INGREDIENTS

1 1/2 gal. (13 lb 8 oz or 2-No. 10 cn) ppineapple, canned, slices
4 lb. lettuce, fresh, trimmed
1 1/2 gal. (12 lb) cottage cheese
2 tbsp. paprika, ground (optional)

INSTRUCTIONS

Drain pineapple; set aside. Separate lettuce leaves. Place 1 leaf on each serving dish. Arrange pineapple slice on each lettuce leaf, hollow side up. Place 1/4 cup (1-No. 16 scoop) cheese on each pineapple slice. Garnish with paprika.

NOTE: 5 lb 8 oz fresh lettuce A.P. will yield 4 lb trimmed lettuce.
