INGREDIENTS
4 lb. lettuce, fresh, trimmed
75 to 80 each (30 lb) tomatoes, fresh
INSTRUCTIONS
Trim, wash, and prepare lettuce. Separate leaves. Slice each tomato into 4 slices. Arrange 3 slices tomatoes on each lettuce leaf.
NOTE: 1. 5 lb 8 oz fresh lettuce A.P. will yield 4 lb trimmed lettuce.
2. 33 lb fresh tomatoes A.P. will yield 30 lb sliced tomatoes.
