Cranberry Orange Relish

INGREDIENTS

4 3/4 qt. (4 lb 12 oz) cranberries, fresh, washed, sorted
10 each (5 lb) oranges, fresh. A.P.
9 2/3 cups (4 lb) sugar, granulated

INSTRUCTIONS

Put cranberries through food grinder or chopper to grind fine. Set aside. Cut oranges into quarters; remove seeds. Coarse grind through food grinder or chopper. Set aside. Combine cranberries, oranges, and sugar; stir until sugar is dissolved. Cover; refrigerate until ready to serve.

NOTE: 5 lb fresh cranberries A.P. will yield 4 lb 12 oz sorted cranberries.
