Cranberry, Orange, And Apple Relish

INGREDIENTS

4 3/4 qt. (4 lb 12 oz) cranberries, fresh, washed, sorted
2 each (1 lb) oranges, fresh. A.P.
3 lb 8 oz apples, eating, cored, unpared
4 1/2 cups (2 lb) sugar, granulated

INSTRUCTIONS

Put cranberries through food grinder or chopper to grind fine. Set aside. Cut oranges and apples into quarters; remove seeds. Coarse grind through food grinder or chopper. Set aside. Combine cranberries, oranges, apples and sugar; stir until sugar is dissolved. Cover; refrigerate until ready to serve.

NOTE: 1. 5 lb fresh cranberries A.P. will yield 4 lb 12 oz sorted cranberries.
2. 4 lb 2 oz fresh eating apples A.P. will yield 3 lb 8 oz eating apples.
