Bacon And Cheddar Cheese Sandwiches

INGREDIENTS

200 slices (12 lb) bread
1 qt. (2 lb) butter or margarine, softened
1 qt. (2 lb) salad dressing
1 3/4 cups (14 oz) pimientos, canned, chopped
2 cups (1 lb) pickle relish
40 slices (2 to 2 1/4 lb) bacon, cooked, crisp, chopped
6 qt. (8 lb) cheese, cheddar, shredded
5 lb. lettuce, fresh, trimmed

INSTRUCTIONS

Mix shredded cheddar cheese, chpped crisp bacon, pimientos, sweet relish, and salad dressing. Spread on buttered bread: 1/4 cup bacon cheese mixture on 1 slice of bread; cover with second slice of bread.

NOTE: 2 to 2 1/4 lb bacon or 40 slices bacon A.P. will yield about 2 3/4 cups cooked bacon.
