Polish Sausage Sandwiches

INGREDIENTS

100 each (25 lb) Polish sausage
2 1/2 gal. water
400 slices (25 lb) bread, rye

INSTRUCTIONS

Cover knockwurst with water, bring to a boil, reduce heat; simmer 20 minutes. Drain, leaving enough water to cover bottom of container. Keep hot until served. Cut sausages diagonally in 1/2-inch thick slices, serve 3-4 slices per sandwich (varies with size of sausage). Serve on rye bread.
