INGREDIENTS
18 lb 12 oz. ham, fresh, cooked
200 slices (12 lb) bread
3 1/8 gal. 1 2/3 Brown Gravy recipe, prepared, hot
INSTRUCTIONS
Cut pork ham in thin slices, 16 to 24 slices per pound. Place 3 to 4 slices pork ham on one slice of bread. Top with second slice of bread. Prepare 1 2/3 recipe for Brown Gravy recipe using pork drippings. Pour 1/2 cup hot gravy over sandwich. Serve immediately.
NOTE: 30 lb 12 oz pork, ham, boneless will yield about 18 lb 12 oz cooked fresh ham. See "Roast Fresh Ham" recipe for cooking directions.
