INGREDIENTS
3 qt. (4 lb) onions, dry, chopped
1 1/2 qt. (2 lb) peppers, sweet, fresh, chopped
2 cups (1 lb) shortening, melted
7 qt. (14 lb) eggs, whole, slightly beaten
5 tbsp. (3 1/2 oz) salt
2 tsp. pepper, black
200 slices (12 lb) bread
4 lb. lettuce, fresh, trimmed (optional)
INSTRUCTIONS
Saute onions and peppers in shortening until lightly browned. Combine sauteed vegetables, eggs, salt, and pepper; mix well. Pour 1/3 cup mixture on greased griddle. Cook until both sides are lightly browned. Place omelet on 1 slice bread; top with lettuce and second slice of bread.
