Pizza Sauce

INGREDIENTS

2 1/4 cups (12 oz) onions, dry, chopped
3 tsp. ( 3 cloves) garlic, dry, minced
1/2 cup salad oil
3 3/4 qt. (1 1/4-No. 10 cn) tomatoes, canned, crushed
2 2/3 cups (3/4-No. 2 1/2 cn) tomato paste, canned
1/4 cup (2 oz) sugar, granulated
1 1/2 tbsp. (1 oz) salt
1 tsp. pepper, black
4 tsp. basil, sweet, ground
3 leaves bay leaves, whole

INSTRUCTIONS

Saute onions and garlic in hot oil until onions are soft and light yellow. Add tomatoes, tomato paste, sugar, salt, pepper, basil, and bay leaves. Bring to a boil; reduce heat and simmer 1 hour. Remove bay leaves.

NOTE:
1. 3/4-36 oz cn canned tomato juice concentrate may be substituted for tomato paste.
2. 4 tsp. ground oregano may be used for sweet basil.
