INGREDIENTS
3 qt. water, boiling
2 3/4 qt. (5 lb) sugar, granulated
1 tsp. salt
1 3/4 cups (8 oz) cornstarch
1 qt. water
2 cups (1 lb) butter or margarine
3 qt. (6 lb 13 oz or 1-No. 10 cn) pineapple, canned, crushed
1 tsp. nutmeg, ground
1/2 cup juice, lemon
1 cup (3 oz) lemon rind, grated, (optional)
INSTRUCTIONS
Add sugar and salt to water; stir until dissolved. Blend cornstarch and cold water to make a smooth paste. Add paste to hot water, stirring constantly; cook 10 minutes or until thick and clear, stirring constantly. Add remaining ingredients; mix, and allow to return to boiling point. Serve hot.
NOTE: 12 oz lemons A.P. (3 lemons) will yield 1/2 cup juice.
