INGREDIENTS
3 cups (1 lb) bacon, chopped
1 qt. (1 lb) onions, dry, sliced
2 1/4 gal. (18 lb 15 oz or 3-No. 10 cn) beans, green, canned
3/4 tsp. pepper, cayenne
1 1/4 gal. (9 lb 15 oz or 1 1/2-No. 10 cn) corn, canned, cream corn
INSTRUCTIONS
Saute bacon and onions until bacon is partially browned. Drain beans reserving 1 1/2 qt liquid. Add bacon, onions, beans, liquid, 3/4 tsp cayenne pepper to corn; cover; continue cooking 15 minutes. Serve with cooking liquid (pot liquor).
NOTE: 1 lb 3 oz onions, dry, A.P. will yield 1 lb sliced onions.
