Grilled Potato Cakes

INGREDIENTS

3 qt. (6 lb 2 oz or 1-No 10 cn) potatoes, white, instant
2 3/4 cups (12 oz) milk, nonfat, dry
9 3/4 qt. water, boiling
2 cups (1 lb) butter or margarine
3 tbsp. (2 oz) salt
2 tsp. pepper, black (optional)
2 1/2 cups (12 eggs) eggs, whole beaten
4 1/2 cups (1 lb) flour, pastry

INSTRUCTIONS

Blend potatoes and nonfat dry milk together. Set aside. Add water, butter or margarine, and salt to mixer bowl. Stir to blend. On low speed, rapidly add potato and milk mixture to liquid; mix 1/2 minute. Stop machine and scrape down sides and bottom of bowl. Add pepper. Add eggs. Mix well. Chill mixture. Shape into 4 oz cakes using No. 8 scoop. Roll cakes in flower. Grill on well-greased 375 degrees F. griddle until golden brown on both sides.
