INGREDIENTS

100 each (40 lb) potatoes, sweet, fresh, A.P.

INSTRUCTIONS

Scrub potatoes well; dry; remove any blemishes; place on sheet pans. Prick skin with fork to allow steam to escape. Bake 45 minutes or until done.
