Deep Fried Corn-On-The-Cob

INGREDIENTS

100 ears (37 lb) corn, fresh, on-the-cob

INSTRUCTIONS

Wash corn; drain and dry thoroughly. Fry 3 minutes; drain well in basket or on absorbent paper. Do not allow kernels to brown during frying.

NOTE: 1. 55 lb fresh corn will yield 37 lb fresh corn E.P. Remove husks, silk and any blemishes or discoloration.
2. 32 lb (100 ears) frozen corn-on-the-cob may be used. Thaw completely; dry thoroughly. Fry 4 minutes.
